Aspect Hospitality, the hospitality division of Aspect Global has entered Mumbai’s premium dining market with FITOUR, a new 14-seat restaurant in Bandra West. The restaurant presents Indian cuisine through a curated tasting menu that blends food, design, storytelling, and sensory elements.
With one seating and an intentionally limited capacity, FITOUR caters to the rising interest in intimate, experience-driven dining formats across India. The restaurant takes guests through a multi-course culinary journey, with every course drawing from Indian ingredients, regional flavours, culinary traditions, and personal experiences.
Furthermore, FITOUR reinterprets familiar Indian dishes using contemporary culinary techniques while retaining their connection to their cultural and regional roots. The approach allows the restaurant to present traditional flavours in a modern format without losing their original identity.
Beyond the food, FITOUR builds its dining experience around sound, lighting, fragrance, textures, and curated beverage pairings. Guests can complement the tasting menu with cocktail pairings, international wine pairings, or Indian wine pairings, creating a more immersive experience throughout the meal.
The restaurant also uses its interiors to reinforce the culinary narrative. Terracotta tiles, woven natural materials, textured surfaces, and understated décor give the space a warm and contemporary character while supporting FITOUR’s overall design philosophy.
Moreover, the restaurant features a Nostalgia Wall that showcases photographs, handwritten recipes, personal memories, and artwork associated with the inspirations behind the menu. Guests can also see pickles, ferments, and hand-blended spices used by the kitchen, giving them a closer look at the ingredients and preparation techniques behind the tasting experience.
Hitesh Keswani, Managing Director and CEO, Aspect Hospitality said, “FITOUR represents our vision of creating hospitality experiences that go beyond the conventional dining format. The concept brings together food, storytelling, design, and sensory elements to create a distinctive and intimate experience for guests. Chef Ashwin’s culinary perspective has been central to shaping FITOUR, and we are pleased to introduce a concept that reflects both his journey and Aspect Hospitality’s approach to creating experiences with a strong point of view.”
Chef Ashwin Singh said, “FITOUR is a reflection of my journey with Indian cuisine and the experiences that have shaped my approach to food. The menu draws from memories, places, ingredients, and techniques that have stayed with me over the years, while presenting them through a contemporary lens. I wanted to create an experience that extends beyond the food itself, with every element—from the flavours and pairings to the sound, lighting, and design—contributing to the overall narrative.”
FITOUR has priced its tasting menu at Rs 8,245 plus taxes. Meanwhile, cocktail pairings cost Rs 5,495, international wine pairings cost Rs 6,495, and Indian wine pairings cost Rs 5,145, with all prices excluding taxes.
Overall, FITOUR’s launch reflects the growing momentum behind experiential dining and chef-led hospitality concepts in India. As consumers increasingly look for curated and immersive culinary experiences, restaurants such as FITOUR are moving beyond conventional dining formats to combine cuisine with storytelling, design, and sensory engagement.
